Divina Proporción winery, Toro, Zamora


The project of the Divine Proportion winery was born in 2009, as a result of the illusion and involvement of Máximo San José and his family, owners of the Carpe Diem restaurant in the city of Toro, magnificent Culinary offer. Over the years, the project has been established, and step by step, has been able to transmit its illusion to the wine, and therefore Divine Proportion has become a fruitful winery in addition to the production of careful wines of Toro, has bet for wine tourism.




                                                               









Located in the middle of the Douro River, just 6 km from Toro, the winery has its own restaurant and offers to the guests a guided tour and a menu included. Around the cellar there are 15 hectares of Tinta de Toro vineyard, carefully tended with mime, and where the most appropriate techniques are applied with an ecological and quality cultivation. In total, they now manage to control 100 hectares, coming from winegrowers who yield their vineyards for the production of the winery.


The concept of quality winemaking begins with a careful marketing, implicit in its name, Divine Proportion, which in fact means golden number, perfection. Through the labeling of their wines we perceive that we are before the brand new wine, where the balance is everything. Actually they have also eliminated from the bottle the Spanish concept of young wine, aging and reserve in their striking labels.

They produce four red wines: Encomienda de la Vega, 24 Mozas, Madre Mía, and Abacadabra. Ordered from lowest to highest step by barrel. Let's talk about two of them.

24 mozas

Elaboration: Hand picking in boxes 15 kg. 6 months agin in French oak barrels.                   
Service: 13º-15º C.                                                                                                                                
Alcohol: 14, 5 º C.

A wine of red roubí color, and purple trim. Its aroma gives intense notes of ripe black fruit, blackberry and plum, and also certain spicy notes like the clove. In the mouth it is tasty while maintaining some very lively tannins that give it a certain astringency. The final acidity integrated with fruit and wood round the wine. Slight memories to liquorice, in a not very long end, but with character.
As a curiosity, the label reminds us of a shawl, and as the winery itself says "With the wine '24 mozas' we pay homage to the city of Toro and its rich folklore".


MADRE MIA

Elaboration: Manual harvest in boxes of 15 kilos. Fermentation in French and American oak barrels for nine months. Fermentation in stainless steel tanks. Maleolactic fermentation in barrel.
Service: 14º-16º C.
Alcohol: 14, 5 º C.

Red wine of cherry color very covered and ruby colored borders. The first impression on the nose is very fruity, an impact marked by aromas of blackberries and currants, black fruit in general. It accompanies floral notes and aromas of cocoa. Already in the mouth is a very vivid wine, fresh and full-bodied at the same time, with notes of licorice and vanilla; it also has a markedly acidity perfectly integrated. It is unctuous and with a persistent and powerful retronasal. Easy to drink, invites another drink, while maintaining its character. Delicious.
From its peculiar label to say that it is based on a real fact, on how a wild boar emerged from the mist in the middle of the vineyard. A tribute to nature and an animal very common for these lands.
