Wine tasting of Sherry and Acorn-fed Ham Cinco Jotas

Sherries and Cinco Jotas acorn-fed ham

Within the "International Sherry Week" that was held on the initiative of "Tierra Nuestra" in Seville, we would like to highlight our presence in an instructive tasting of five wines from the Apellation Sherry, along with five different parts of the acorn-fed cured ham Cinco Jotas, 100% acorn, and from Jabugo in the mountainous area of Huelva (Andalusia, Spain).

We began the tasting with a "manzanilla wine", "La Guita", light, dry, and little acid, which salty and sharp touches, and its freshness, enhance the part of the ham designated for the occasion "la maza".

We continue with a "fino wine", "Inocente", a more complex and alcoholic wine, also dry and low acid, with almond aromas to accompany the part of the  ham called "jarrete".

The "babilla" a drier part, and therefore more salty, is accompanied by an "amontillado wine" of a lovely amber color, "Del Príncipe". Wine that has a deep aroma of hazelnut, and introduces aromas and toasted, spicy flavors.

Another different kind of Sherry wine,  "Palo Cortado, Viejo C.P."  serves to accompany the" Contramaza ". A wine both in aroma and in a rather more complex aftertaste, where nuances are intermingled that have to do with nuts, dry grass, wood ...

Sherries selection

To conclude, a very old wine, a V.O.R.S. over thirty years old, an "amontillado" "Coliseo" whose complexity in both aromas and flavors is beyond doubt. Aromas of different kind of wood, timber, raisins, dried figs, cigars, resins ... Pungent flavor, and an avalanche of well-assembled sensations that perfectly accompany one of the tastiest parts of the ham, "la punta".
