Elaboration: The grapes are harvested manually at night so that they arrive as fresh as possible at the winery. There, it is incubated in a tank of uncoated cement and stainless steel. Batonages are made daily. It is left to marinate for 28 days before pressing. From there it goes to a cement tank and a wooden tub before completing its aging in French oak barrels.

Tasting: Through
a deep cherry color with purple edges, this tintilla grape red wine introduces
us to a complex range of aromas. These range from notes of black fruit such as
blackberries or blueberries, floral tones such as violets, to balsamic such as bay,
and also licorice aromas. In the mouth it is powerful, dense, with mineral and
saline touches very typical of the albariza soil from which it feeds. Light
spicy nuances, pepper, mixed with notes of dark chocolate and dark berries. All
this with a lively acidity, but very well integrated into the final assembly of
the wine. With a long finish it is a wine to drink calmly. 13-15 €.*

Pairing: A
wine that is powerful and enveloping at the same time, ideal companion of
stews, all kinds of meat, Iberian products, blue fish, rice with mushrooms. It
goes well with certain desserts, especially those that contain dark chocolate.
Personally I have paired it with squid in its ink, accompanied by white rice;
and the result has been surprising. Here in the picture, it appears accompanied
by a pear pudding.
