Vinification: Manual grape harvest at the time the grape is over-ripe. Maceration in stainless steel tanks, aged 4 months in American oak on its lees, and battonage.
Temperature: 9-11º C.   
Alcohol Content: 12,5º C.



Tasting: Golden yellow color with golden highlights. It is very aromatic, perfumed, with floral notes reminiscent of honey. We can also perceive ripe white fruit (peach and apricot), and also, candied fruit and mango. The palate is oily, smooth and lively, with the initial characteristic sweetness of Pedro Ximenez grape; whereas soft salty notes give the counterpoint. Its marked acidity appears highly integrated, resulting in a dry and long ending in mouth. An ocean of mixed feelings. A powerful aftertaste makes this wine a unique, complex and amazing product. Food pairing: An ideal accompaniment to a wide variety of dishes, from smoked fish/meats, to white meats. And also Ibericos (Spanish Ham), cheeses, patés, elaborate salads.
