Dominio de Cair Wineries

Cair is the result of the mixture of the surnames of two friends who materialized their dream: that of sharing the passion for wine in a cellar.

In 2008, the project was launched, after which Luís Cañas, one of the most interesting wineries in the country in recent years, is located. The Dominio de Cair winery is located very close to the town of La Aguilera, in the province of Burgos (spain), in the Ribera del Duero, surrounded by poor soils and extreme climatology.








                                                                     







David Herrero, directs the commercial department, and from the Enoteca Tierra Nuestra in Huelva, is responsible for explaining what lies behind this project and to tell us some of its most significant wines. Quality vineyards, which are identified with the land from which they come, along with a viticulture respectful of the environment, are basic ingredients for the production of quality wines. Biodynamic agriculture, the absence of pesticides and fungicides, the use of organic fertilizers, or techniques as advanced as pest prevention through the use of pheromones (sexual confusion) are some of the methods used by the winery for the production of its wines .


Calcareous, sandy and clayey soils make up the bulk of its own 23 hectares and another 96 strictly controlled by the winery team. Manual harvesting in glass vines, mostly with a mean age of 42 years, with a yield of 3,500 kilos per hectare.

Elaboration: 9 months aging in French and American oak barrels, with a maximum antiquity of 3 years. Minimum 6 months in bottle. Not filtered.

Unique wine from the winery made with two varieties, Tempranillo 85% and Merlot 15%. Red-cherry red with rimmed rubies, its nose is very fruity, with notes of forest fruits, plum and the typical green pepper that provides the merlot grape. In the mouth it is alive, spicy, with soft tannins, and a good acidity that leaves its imprint. Good retronasal. A very well achieved wine. € 9.


cair cuveé 2015

Elaboration: 9 months aging in French and American oak barrels, with a maximum antiquity of 3 years. Minimum 6 months in bottle. Not filtered.

Red wine of the more purple color than its predecessor of 2014 due to its youth, it presents a more fruity nose. It uses the same varieties, and in the mouth it is a very alive wine, and with a very present acidity. You can see that it still has to evolve in the bottle, but it points very high, even higher than that of 2104. € 9.



cair crianza 2011

Elaboration: 14 months aging in French and American oak barrels, with a maximum antiquity of 2 years. Minimum 12 months in bottle. Not filtered.

Red wine made from 100% tempranillo grapes. It presents a visual appearance of morello cherry color, quite covered. In the nose to the already classic red fruits, it is added mature black fruit, plum; and notes of dairy, as well as vanilla and roasted wood. Also spicy notes like the clove. In the mouth it is velvety, unctuous and alive. The cacao appears. It is round and balanced, with long finish, and once again, a refreshing acidity. € 16. Great value for the Price.



tierras de cair 2011

Elaboration: 24 months aging in new French oak barrels. Minimum 18 months in bottle. Not filtered. 100% tempranillo grape.

Wine of red color very cherry covered, presents violaceous borders. As for the aromas, we get notes of ripe black fruit, candied, like the plum. Also blackberry notes. Toasted nuances, cocoa, vanilla, clove. The wood appears with more clarity, and mineral notes. Its entrance into the mouth is that of a fleshy, structured and enveloping wine. Of very long end with balsamic memories that in spite of the prolonged aging in new cask, it still looks like a fresh and balanced wine. Great wine. 32 €.
